Responsibilities

Job Summary:
The Hygiene Manager is responsible for maintaining the highest standards of food safety and hygiene across all food and beverage operations at Shangri-La Barr Al Jissah, Muscat. This role requires a candidate with a strong background in food safety and hygiene management within luxury hotel environments, alongside a relevant academic background in Microbiology or Food Safety & Hygiene. The ideal candidate will have excellent knowledge of regulatory standards, a proactive approach to hygiene management, and a commitment to fostering a culture of safety and quality across all areas of the hotel.

As a Hygiene Manager , we rely on you to,

Oversee and ensure compliance with all local and international food safety regulations, including HACCP, ISO 22000, and local Omani regulations.
Implement and monitor food safety systems, policies, and procedures to maintain a high standard of hygiene across all kitchens and food service areas.
Conduct regular audits and inspections of food preparation areas, storage, and handling practices to ensure adherence to hygiene standards.
Develop and deliver training programs on hygiene and food safety practices for culinary and service staff.
Continuously educate staff on best practices and updates in hygiene protocols and safety standards.
Conduct risk assessments for all food-related areas and establish preventive measures to mitigate potential hazards.
Work closely with kitchen and service teams to implement corrective actions and improvements when hygiene standards are not met.
Monitor and manage pest control measures in all food service and storage areas.
Maintain and manage detailed records of all hygiene and safety practices, inspections, and corrective actions.
Ensure timely reporting of all incidents related to food safety and hygiene, including any guest complaints, and take appropriate corrective actions.
Prepare and present regular reports to senior management on hygiene compliance, audit results, and areas for improvement.
Conduct regular microbiological testing of food, water, and surfaces to monitor and ensure safety.
Ensure proper implementation of food storage, temperature control, and waste management procedures.
Conduct internal audits and coordinate with external auditors during scheduled inspections and certifications.

What we are Looking For:
Bachelor’s degree in Microbiology, Food Safety, or a related field is essential.
Minimum 5 years of experience managing food safety and hygiene in a luxury hotel environment.
HACCP Certification, ISO 22000, or equivalent certification is highly desirable.
Strong knowledge of food safety regulations and hygiene management practices. Excellent communication, training, and team management skills.
Must be detail-oriented with a proactive approach to identifying and addressing hygiene risks.
